- 1 28 oz can whole peeled tomatoes
- 2 cloves garlic minced
- 2 carrots small diced
- ½ onion small diced
- 1 teaspoon celery seed
- ½ green pepper small diced
- ½ red pepper small diced
- 8 oz chickpea spaghetti
- 1 cup grape tomatoes sliced in half
- 2 tablespoons olive oil divided
- 2 tablespoons Parmesan
- 2 tablespoons parsley
