- 2 15 oz Canned Chickpeas drained and rinsed
- 1 onion small diced
- 2 red bell pepper diced
- ½ cup low sodium soy sauce
- 2 tbs black vinegar
- 2 tbs brown sugar
- ½ teaspoon granulated garlic
- ½ teaspoon ground ginger
- 1 tbs chili garlic sauce
- 1 tbs corn starch
- ½ cup water
- 2 cups cooked rice
- 2 scallions sliced on the diagonal, for garnish
