How this recipe came about
Due to Covid-19 I haven’t been able to find any store made pico de gallo. Lucky for me, I had this recipe ready from when I used to make it in college 10 years ago.

Pico de Gallo
The most delicious pico de gallo I have ever had! Fresh to death jalapeño, tomatoes, onion, cilantro, and lime come together in a fresh mix to serve with whatever you like! I like to serve this with tacos!

Ingredients
- 2 tomatoes small diced
- 1 jalapeño small diced
- 1 lime juiced
- ¼ cup onion diced
- ⅓ cup cilantro chopped
- 1 teaspoon salt to taste

Instructions
- Small dice the tomatoes and add to a medium size bowl. Small dice the jalapeño and add to the medium size bowl.
- On the cutting board, chop up the cilantro and onion together. Smush the cilantro and onion together using the knife to press down firmly. Be careful! Don't cut yourself. Continue to chop and press down repeatedly until the onions start to have a green hue.
- Add onions, cilantro, salt and juiced lime to the bowl. Mix and Serve.
