How this recipe came about
I bought way to much pork tenderloin for easter and had some left over. 3 tenderloins to be exact. I made instant pot pulled pork and needed a topping for the pulled pork tacos I was planning to make.

Ingredients
- 8.5 oz package coleslaw mix
- ¾ cup white vinegar
- ¾ cup water
- 1 tablespoon salt
- 1 tablespoon oregano
- 1 Jalapeño julienned (optional)

Instructions
- Add water, vinegar, oregano, and salt to a saucepan and bring to a boil.
- Pour water and vinegar mixture over the coleslaw mix and julienned jalapeños.
- Allow the mixture to come to room temperature before serving. The longer the vegetables sit the more they will wilt.
- Store pickled slaw in the fridge for up to 5 days.
