Orecchiette Truffle Mac & Cheese

Ingredients
- 8 oz Orecchiette pasta cooked al dente
- 1 teaspoon white truffle oil
- 1 tablespoon all purpose flour
- 1 tablespoon butter
- ¼ cup milk
- ⅛ cup Provolone cheese shredded
- ⅛ cup Mozzarella cheese shredded
- ⅛ cup Asiago cheese shredded
- ¼ cup Parmesan shredded, divided
- ⅛ cup fresh parsley

Instructions
- Cook pasta according to instructions until al dente
- Meanwhile, create a roux by melting butter in the pan, adding flour, and whisking until combined.
- Stir in milk and shredded cheeses, reserving the Parmesan for garnish. Bring to mild boil
- Remove from heat and stir in pasta.
- Stir in truffle oil
- Garnish with Parsley and Parmesan
