Ingredients
- 1-2 rotisseries Chicken carcass or 1lb of beef bones
- ½ onion
- 2 stalks celery
- ½ lb carrots
- 6 cloves garlic

Instructions
- Roast bones, onions, and garlic for for 30 minutes in a 450 degree oven stirring halfway.
- Place vegetables and the carcass or bones into the instant pot and cover with cold water by approximately 1 inch (or up until the ⅔ mark. I use an 8 QT pot).
- Cook in the instant pot on high pressure for 120 minutes, natural release (takes an additional 90 minutes).
- Open the lid and pour the contents through a fine mesh sieve into another container to cool in the fridge. You want to try to cool the broth as fast as possible to avoid the growth of bacteria. Once cooled, freeze into ice trays or use as needed for up to 5 days.
