Honey Sriarcha Meatballs & Rice

Ingredients
- Meatballs
- 1 pound ground chicken
- ½ cup panko breadcrumbs
- 1 egg
- ¼ cup green onions
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- Honey Sriracha Sauce
- ⅛ cup Sriracha
- 5 teaspoons soy sauce
- 5 teaspoons rice vinegar
- 5 teaspoons honey
- 2 garlic cloves
- ½ teaspoon toasted sesame oil
- Garnish
- 1 teaspoon Sesame Seeds
- 1 diced green Pepper
- 1 tablespoon Cilantro
- 2 cups cooked rice
- 1 lime quartered

Instructions
- Preheat oven to 375 degrees
- Chop green onions. Mince garlic.
- In a large bowl, combine chicken, breadcrumbs, egg, green onion, garlic powder, salt, and pepper. Shape into 1 ½ inch balls.
- Place onto lightly greased baking sheet and cook for 20-25 minutes.
- Meanwhile, mix sauce ingredients together and bring to a boil over medium heat, whisking continuously.
- Remove from heat and toss meatballs in sauce.
- Serve over rice and garnish with sesame seeds, diced peppers, carrots, and cilantro.
