Honey Pickles
Sweet and Spicy homemade Pickles. Great accompaniment for chicken, BBQ, potato salad, etc. Great solo too.

Ingredients
- 1 cup white vinegar
- ½ cup rice wine vinegar
- 1 tablespoon crushed red pepper flakes
- 1 tablespoon dried mustard
- 5-6 Persian cucumbers
- 1 tablespoon dill
- 3 tablespoons honey

Instructions
- Thinly slice cucumbers crosswise about ¼ inches thick. A mandolin works best for this.
- In a small saucepan, add vinegar, honey, crushed red pepper flakes, mustard, dill and ½ cup of water. Bring to a boil and remove from the heat.
- Add cucumbers to a wide mouth quart size mason jar.
- Pour warm liquid over cucumbers
- Refrigerate for at least 12 hours and up to 7 days.
