How this recipe came about
I was browsing the deli at a local grocery store a few summers ago when I stumbled upon two pasta salads that I couldn’t take my eyes off of: this one and a mandarin honey & lemon summer pasta salad. I didn’t buy them but knew they would taste amazing. I took note of the ingredients and went back to the house to attempt to make them. The results did NOT disappoint!

Greek Pasta Salad

Ingredients
- ⅛ cup olive oil
- ½ cup italian dressing
- 2 tablespoons red wine vinegar
- 1 cucumber peeled, deseeded, and diced
- 1 small red onion diced
- 1 green pepper diced
- ½ red pepper diced
- ½ pound cherry tomatoes quartered
- ¼ cup feta crumbled
- ½ pound fusilli pasta cooked al dente in salted water
- ¼ cup parsley

Instructions
- Cook your pasta al dente in salted water.
- Meanwhile, work on your veggies: peel, deseed and dice the cucumber. Small dice the bell peppers, tomatoes and onion.
- Next, build your sauce by combining olive oil, vinegar, and italian dressing.
- Bring together the pasta, veggies and sauce in a large mixing bowl. Allow to chill before serving. Garnish with parsley before presenting
