Deliciously baked Vegan Gluten Free Mac & Cheese with carrots, nutritional yeast, rice milk, and vegan cheese.
How this recipe came about
I was invited to a friendsgiving dinner party a few years back. I wanted to make a dish that everyone could eat. Especially the hosts who were gluten free and vegan.

If you are anything like me, I tend to get a little eater’s remorse after a huge serving size of mac and cheese. This apple bacon walnut spinach salad should make you feel better.

Ingredients
- 2 carrots
- 12 oz gluten free macaroni
- 2 cups cheddar style shreds 1 pack
- 3 teaspoon nutritional yeast
- 3 tbs vegan butter
- 2 cups rice milk
- ½ teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper
- ⅓ cup vegan Parmesan optional
- ⅓ cup gluten free breadcrumbs optional

Instructions
- Preheat oven to 350
- Cook pasta 1-2 minutes from al dente
- Purée carrots: to a food processor add 1-2 cups of milk and the carrots
- Make sauce: melt butter, add in spices and puréed carrots with milk. Add cheddar shreds and whisk frequently until cheese sauce comes together
- Add pasta and mix to combine. Poor into a 9×9 baking dish and top with breadcrumbs. Place in oven for 15 minutes. Sprinkle with Parmesan and Enjoy.
- Optional: mix breadcrumbs, Parmesan and 1 tablespoon melted butter. Sprinkle mix on top of baking dish and broil for 2-3 minutes until bread crumbs appear crispy.
Notes
You can make gf breadcrumbs by combining 1 tbs nutritional yeast with 1 tbs gf flour (like almond). Sprinkle with cayenne, salt, and garlic powder. I use Daiya Cheddar Style Shreds. It’s important (to me) to find gluten free elbows with grooves on the outside for maximum cheese coverage.
