How this recipe came about
I watched a video on how to make zucchini boats. My fear was that they would be just as watery as my other attempts to make food with zucchini. Adding tomato paste really helped to keep the water down. I added my favorite pizza toppings (sausage, peppers, onions) and it was a hit!

Ingredients
- ¾ lb spicy italian chicken sausage about 2 casings removed
- 2 teaspoon tomato paste
- ⅔ cup garlic marinara sauce
- 1 teaspoon onion powder
- 1 teaspoon onion flakes
- 1 red bell pepper diced
- 1 teaspoon Italian seasoning
- 1 teaspoon crushed red pepper flakes for garnish
- ¼ cup mozzarella cheese
- ⅛ cup parmesan cheese

Instructions
- Preheat oven to 400 degrees fahrenheit
- Hollow out zucchini boats (ensure all of the seeds are removed) with a melon baller. Small dice red bell pepper and set aside.
- Using a bakeable non-stick cooling rack on top of a half sheet pan (or larger), bake zucchini hollow side down for 17 minutes.
- Meanwhile, heat a non-stick medium size skillet on medium high heat. Remove casings from sausage and add to the pan along with the red bell pepper. Using a plastic spatula, break up the sausage until it’s in small pieces and cooked through (about 5 minutes). Add garlic marinara (regular marinara is fine too just add 1 teaspoon garlic flakes or powder). Stir in onion powder, onion flakes, italian seasoning, and tomato paste.
- Pull boats out of the oven and fill them with the sausage and sauce mixture. Sprinkle each boat with mozzarella, parmesan cheese, and crushed red pepper flakes;Place back in oven for 5 min until cheeses are bubbling and golden.
