Ingredients
- 1 cup brown rice
- 2 cups chicken broth
- ¼ cup frozen corn
- 1 can black beans
- 1 red pepper diced
- cilantro for garnish
Spice Mixture
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon chili powder
- ¼ teaspoon cayenne pepper

Instructions
- Cook rice according to directions on package using chicken broth instead of water. Approximately 45 minutes.
- Drain and rinse beans.
- Add all powdered spices together in a small bowl and mix to create a spice mixture.
- In a large sauté pan, cook the red pepper for 3 minutes add corn and beans along with spice mixture
- Mix cooked rice in sauté pan and let sizzle for 2 minutes
- Take off heat, toss in cilantro, and serve
