Ingredients
- 2 cups of cooked brown rice for serving
- ½ lb chicken breasts cut into chunks
- 1 zucchini
- 1 bell pepper
- ½ cup onions
- 1 can fire roasted tomatoes
Marinade
- 1 cup plain yogurt
- 1 tablespoon tandoori masala
- 1 tablespoon lemon juice
- ¼ teaspoon ground ginger
- 1 teaspoon black pepper
Sauce
- ½ cup marinara
- 2 teaspoons garlic powder
- 4 teaspoons tandoori masala
- ½ teaspoon paprika
- 1 teaspoon turmeric
- ¼ teaspoon cayenne
- ½ teaspoon salt
- ¼ cup coconut milk added last

Instructions
- Add chicken, yogurt, tandoori masala, lemon juice, ground ginger, and pepper in a large zip lock bag. Zip up the bag and mix the ingredients together using your hands.
- Dice onions, zucchini, and bell pepper.
- Using a small bowl, make the sauce. combine marinara, garlic powder, tandoori masala, paprika, tumeric, and cayenne.
- In the instant pot (I use an 8 quart), sauté the onions until translucent, cook chicken til brown on all sides, approximately 5 minutes. Add sauce, zucchini, bell pepper, and fire roasted tomatoes. Stir until combined. Pressure cook 8 minutes on high pressure. Quick release. Open the instant pot lid and stir in coconut milk. Serve with rice.
