Ingredients
- 1 lb stew beef diced into chunks
- 1 cup chicken broth
- 1 Lime for garnish
Marinade
- 1 tablespoon olive oil
- 1 tablespoon vinegar
- ¼ teaspoon garlic powder
- ¼ teaspoon Chile powder
- ¼ teaspoon oregano
- ¼ teaspoon cumin
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon paprika
- zest and juice of 1 lime
- 1 tablespoon soy sauce
- 2 dashes of liquid smoke
Onion relish
- ½ large onion
- ¼ cup cilantro
- Juice of 1 lime

Instructions
- Small dice the onion and set aside. Juice and zest 1 lime. Add all ingredients for the marinade into a gallon size ziplock bag. Mix by closing the bag and shaking to combine. Add the diced stew beef into the bag. Mix by closing the bag and shaking to combine. Note that you can normally purchase stew beef cut into chunks at the store. Let beef marinate for at least 30 minutes or overnight.
- Turn on the saute setting of your instant pot. Add ½ small diced onion and stew meat to the pot. Sear the mean on all sides.
- While meat is searing, put marinade in large measuring cup and fill to the 1.5 cup mark with chicken broth. Pour the chicken broth/marinade mixture into the pot. Press cancel and Cook on manual for 20 minutes followed by a 10 min quick release.
- Make the onion relish while your beef is in the instant pot. Chop up approximately ¼ cup cilantro and juice 1 lime. Add these ingredients to the remainder of the small diced onion.
