Like most people I wanted an alternative to rice that was both healthy and delicious. Did you know you can eat 1 cup of cauliflower rice in comparison to regular rice?

Ingredients
- 1 large head of cauliflower
- 4 tablespoon olive oil
- 3 garlic cloves minced 1 reserved
- ½ large onion chopped
- ¼ cup chopped cilantro
- 1 tablespoon white vinegar
- Juice of 1 lime
- ½ teaspoon cumin
- ½ teaspoon salt

Instructions
- Remove skin from onion and cut into large chunks. Pulse in food processor and set aside in a small bowl.
- Cut cauliflower into florets: Remove a majority of the green leaves from bottom of head by chopping off as much stem as you can. Pull the rest off with your hands or use a paring knife to remove the remaining leaves. Keeping the cauliflower upside down, cut around the stem until florets separate from the stem.
- Place florets into the food processor and pulse until the cauliflower yields a rice texture.
- Add onion to a preheated pan on medium high heat with 2 tablespoons of olive oil. Cook for approximately 3-4 minutes.
- Meanwhile, prepare the sauce: blend the remaining olive oil, garlic, white vinegar, lime, cilantro, salt and cumin in the food processor or small bowl.
- Add cauliflower and sauce to the pan with the onion. Mix and cook for an additional 2 minutes. Garnish with lime slices and additional cilantro (optional).
