How this recipe came about
These are my absolute favorite muffins. I first made these muffins when I had many bananas in my freezer.

I’ve added/omitted the following ingredients:
- added nuts like walnuts or pecans
- omitted the egg for a vegan option (I actually forgot it and it turned out just fine!)

Ingredients
- 1.5 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 large bananas mashed
- ½ cup white sugar
- 1 egg
- ⅓ cup apple sauce
- ½ cup semi sweet chocolate morsels

Instructions
- Preheat oven to 350 degrees. Coat muffin pan with non-stick spray or use muffin liners.
- Defrosting bananas? Place them in the microwave for 30 seconds at a time until they are squishy to the touch.
- In a mixing bowl combine eggs, bananas, sugar, and applesauce. Beat until blended. Add baking soda, baking powder, salt, and flour into the mixing bowl. Mix together until combined. Add chocolate morsels and fold together again until combined.
- Scoop mixture into muffin cups. Fill approximately ¾ of the way. Place in preheated oven for 20-25 minutes. Muffins are done with a toothpick is inserted into the center of a muffin and comes out clean. These muffins will keep well stored in a ziplock baggie in the refrigerator for one week.
