Buffalo Cauliflower Bites

Ingredients
- 1 cauliflower head
- 2 tablespoons unsalted butter
- ½ cup buffalo sauce
Cauli Rub
- ¼ cup sugar
- 1 tablespoon salt
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
- 2 teaspoons granulated garlic
- 1 teaspoon onion powder
- ½ teaspoon cayenne pepper
- ½ teaspoon ground cumin
- ½ teaspoon black pepper

Instructions
- Preheat oven to 400 degrees.
- Remove leaves from cauliflower head.
- Create a tin foil stand for the cauliflower head by wrapping tin foil around the base of the cauliflower. Place the head of cauliflower on its stand on a baking sheet.
- Combine all ingredients for Cauli Rub in small bowl and mix.
- Melt butter for 20-40 seconds in a microwave (heat time may vary by manufacturer) or in a small pot over medium heat.
- Using a pastry brush, paint the cauliflower head with butter. Ensure that butter reaches each nook and crannie.
- Sprinkle the Cauli Rub over the cauliflower head and massage it into the nooks and crannies.
- Create a tin foil tent for the cauliflower, cover the cauliflower, and place it in the oven for 15 minutes.
- Remove the tin foil tent and cook another 25 minutes.
- Using a pastry brush, cover cauliflower head in buffalo sauce and cook for another 5 minutes.
- Cut into florets and serve.
