Apple Bacon Walnut Spinach Salad
This is a fall favorite in my house that is both sweet and savory.

Ingredients
- 5 oz baby spinach 1 bag
- 2 slices of bacon
- ¼ cup candied walnuts recipe to follow
- ⅛ cup blue cheese
- ⅛ cup dried cranberries
- 1 granny smith apple sliced into match sticks
Maple-Cider Dressing
- ¼ cup olive oil
- ⅛ cup apple cider vinegar
- 1 Tablespoon Maple Syrup
- 1 teaspoon mustard
- ⅛ teaspoon salt
Candied Walnuts
- 1 tablespoon brown sugar
- 1/16 teaspoon salt
- 1/16 teaspoon ground cinnamon
- 1 tablespoon water
- ¼ cup walnuts

Instructions
- Using a small fry pan, cook bacon until crispy. Remove from heat and let dry on a paper towel. Once cool enough to handle, chop into small pieces and set aside. Pour bacon fat into a coffee cup or small bowl to cool.
- Cook Candied Walnuts: Excluding the Walnuts, combine “Candied Walnuts” ingredients in the same small fry pan over medium heat until the sugar dissolves and is bubbling. Add Walnuts and cook an additional 2-3 minutes.
- Mix together dressing: combine all ingredients for “Maple-Cider Dressing” in dressing shaker or jar and shake vigorously.
- Combine all ingredients, toss salad, and enjoy.
